Getting back to blog after a long time and it feels so good and sweet !! Hope to spread this sweetness with this sugar free coconut Popsicle πŸ˜€ . This is the most delightful a raw and healthy ice cream can get for me.

The past few months made it challenging to get back to the blog.Β First my laptop got conked and took looong to repair ! I was preparing for a Yoga certification exam leading upto February keeping me busy. Since then I’ve been on a detox diet to (finally) tackle some not always bothering but long standing health issues. This isΒ keeping me away from trying a lot of dishes the foodie in me desires. But guess I’ve finally found the inspiration to explore yumminess strictly on whole foods (no sugar, maida , refined foods). Diet wise whether you are in the same boat as me or not. I’ll encourage you to try this ice cream. We often overlook the beauty of natural raw foods, their lovely flavors and have gotten used to consuming them with refined sugar.

This recipe has just a few ingredients 5-6, is completely raw and sugar free with no store bought ingredients or artificial substances. Using this as a concept one can make so many variations and get many more dairy & sugar free raw ice cream options πŸ™‚ . I’ve used only young coconut meat or what we call as Malai/Ganji to make this ice cream. I had coconut meat from about 8 coconuts after doing a fast which got me to trying this ice cream. Just to be specific, the coconuts I used had malai of all kinds – some had thin malai(ganji) and some had thick soft layer. So your malai doesn’t really have to be a specific kind for this recipe. However the thick malai has more fat and would make the Popsicle more creamy so choose atleast half of that variety. This malai is a precious ingredient guys – good fats , lovely sweetness and taste & so nutritious!. One should never ever waste this magical food. Eat it raw, grind it into delicious cream, add it to smoothies.

You can expect to see many more healthy recipes from me as I move closer into whole foods side of the plant based vegan diet. Ill also be experimenting with more raw foods soon. But my appetite for culinary adventure wont let me restrict my cooking and ill keep sharing recipes which are more indulging and encouraging for anyone going vegan πŸ™‚

Makes 6-8 popsicles

Ingredients

Coconut Meat/Malai from 8 young coconuts (Choose more with thick malai)
2 Tbs Date syrup (more if more sweetness desired)
2 Tbs dried blueberries
2 Tbs thinly shaved Almonds (exclude for nut free)
1 Tbs Chia seeds
Pinch of cardamom powder

Steps

1. Grind coconut meat into a smooth cream. Add Date syrup and Cardamom powder and pulse the mixer a few more times.
2. Add the Blueberries, almonds and chia seeds and give one or two small pulses.
3. Pour into moulds and freeze overnight.
4. Dip the mould into room temperature water to loosen the Popsicle before removing it.
