Rice Noodles with Lentil Curry

October has been a great month with lots of interesting stuff happening.

I got the opportunity to come up with some new cake flavors as part of my baking venture Homemade Beku – https://www.facebook.com/HomeMadeBeku. Making something new is always exciting as it offers a prospect to learn new things 🙂

I have been honing my Yoga skills under the able guidance on my teacher Regeesh learning a lot of cool stuff I thought it would take ages for me to do. Its not just about being able to do a new pose. Its about building resistance to that thought inside you which says maybe you can’t.. maybe you need more time.. maybe not now.. Its important to break lose from these thoughts every now and then and try something new. It good to realize you can do anything if you put your focus and effort into it. Practice and all is coming.. 🙂 and then keep practicing.

I spent two days without any mobile network in the Malanad region of western ghats. Having no social media to distract you can put you in such a good mind space. Two blissful days spent only with bird chirping, trees swaying and frogs croaking 🙂

All this is the reason its taken me a while to get to my blog. I always have pending ideas to pen down in here. The list is growing ! Going forward I intend to be more regular and perhaps write more than just about food here.

Okay coming to the recipe now 😀 . I joined Vegan Mofo(Vegan Month of food) this month on Instagram. It is Rice Noodles with Red Lentil Curry.

I often came across recipes which combine Lentils and Pasta ! and was always curious to try it out. This is a gluten free recipe made with Rice noodles. Giving it a slight Vietnamese touch by presenting in a bowl topped with chopped herbs 🙂 **Someday I wanna travel to these countries and eat lot of soupy noodles out of a bowl (hopefully finding vegan wont be too tough).

Here I am using Red Lentils which is called Masoor dal in India.  The Curry is flavorful with garlic and other veges. This becomes a wholesome meal with carbs , proteins and vegetables. Other than Rice noodles you can also use any other types of noodles/pasta with this recipe.

Ingredients

100g Rice vermicelli Noodles
2 Tbs Olive Oil
3/4 cup red lentils / masoor dal
3 cups water
2 carrots finely diced
1 Potato finely diced
3 Garlic cloves minced
1 Onion finely chopped
2 medium tomatoes finely chopped
1/2 tsp Red chilli powder
1/2 tsp Turmeric/haldi(for color)
2 tsp crushed walnuts
Chopped Coriander leaves

 

Steps

  1. Soak red lentils for 15-20 minutes to reduce cooking time. <optional>
  2. Heat olive oil in a large pan. Saute garlic and onions in the oil till they soften.
  3. Add potatoes , carrots and tomatoes. Season this with salt , chilli and turmeric and mix. Allow to cook for 2-3 minutes.
  4.  Add lentils and water and let the mixture simmer for 15-20 minutes till the lentil grains start to break apart.
  5. Meanwhile in a separate pan boil the noodles / pasta in salted water as per the package instructions.
  6. Assemble the dish in a bowl with the soupy lentils topped with rice noodles, chopped herbs and crushed walnuts.
