2 ingredient Gluten & Sugar free Cookie

I have been on lookout for healthier options for crunchies and munchies off-late. So when I came across this dairy-free egg-free gluten-free sugar-free and oil-free (yeah that’s it πŸ˜€ ) snack recipe I just had to try it. We often assume these healthier options won’t taste that good but you will be pleasantly surprised when you try them out. There is plenty of variety out there in that healthy food !! Much more than what you probably ate while growing up. For me, since I went vegan and started looking for healthier options there hasn’t been one day of boredom as far as food is concerned. There is just so much to try and experiment. The possibilities are endless! πŸ™‚

Banana Coconut Cookie

 

A special shout out to those restricted in their diet due to health conditions. Diet restrictions don’t mean you got to sacrifice all your favorite stuff ! You can always find alternatives πŸ™‚ If you are on a strict healthy diet, this recipe is for you.

This is a super simple cookie made from just two ingredients! Banana & Coconut ! Its perfect for a quick snack at any time of the day. Do I even need to say its healthy πŸ˜€ Β I dunno how many of you have tried this combination but its surprisingly good. The sweetness of banana negates requirement of any sweetener. The coconut on baking gets toasted giving a lovely crunch. And if you do feel like you are missing something you could top it up with chopped nuts or chocolate chips. The mixture bakes into a golden cookie which is crunchy on the outside and moist inside. Isn’t it amazing !? just two ingredients doing this magic ! Check out the recipe below.

Ingredients

2 bananas
1.5 cups dessicated coconut

Optional – choco chips / chopped nuts

 

Steps

1. Grind the banana and coconut in a mixer until the ingredients are well combined. The mixture is wet yet lumpy which can be shaped into balls.
2. Preheat oven to 180 C (use both bottom and top coil if using a convection oven).
3. Shape the mixture into discs between your palms and place them on a baking tray covered with parchment paper. More thin = more crunchy.

4. Sprinkle any toppings if desired and bake in preheated oven on the center rack for 25-30 minutes or until golden.
